In view of its lip, lobe-type or often auricle-type shape and dark brown fruit body, the black fungus mushroom is often also called wood-ear fungus. Black fungus mushrooms have a fine velvety black-brown surface and are pale greyish in colour on the underside. The underside is always lighter than the upper side. However, there are also other variations such as e.g. black-white or only white. The mushrooms shrink to one-tenth of their original size during the drying process and reconditioned to the original size.

Black fungus or mu err mushrooms can be found in almost every Chinese dish with spicy dark sauces as well as in a range of delicious soups. They reach a multiple of their size after rehydration. The characteristic taste is only slightly fungus-like. However, they absorb the taste of the liquids in which they are prepared very well. One characteristic of black fungus mushrooms is that they generate a special mouth feel - a texture reminiscent of fresh seaweed.
