    Sweet corn (sweet maize) is harvested before the end of the ripening process, so that the sugar which it contains is not yet completely converted into starch and the corn thereby retains its sweet taste. The cobs are removed from their shells and leaves, washed, sorted according to size (small, medium, large) and then preserved.
