Vermicelli (glass noodles) are a noodle-like ingredient in East Asian cuisine. They are very thin and almost transparent when cooked. 

Glass noodles made of mung bean starch consist of approx. 88 % carbohydrates and 2.5 % dietary fiber, and contain no salt, fat, or protein. They should not be confused with (opaque, whitish) rice noodles.


Glass noodles are made solely from mung bean starch and water.A drying and wet grinding process is used to extract the binding, sweet basic ingredient from the kidney-shaped beans, which is then mixed with water.




We offer various container sizes, including “short-cut” noodles 3-5 cm long for industrial use.  


Unlike other types of noodles, glass noodles generally are not cooked, but are softened in water and stir-fried or are directly added to soups. They can also be fried. These noodles have a rather neutral flavor, but easily bind with other aromas, which is why they are usually prepared with other flavorful ingredients.
