Ajvar is a hot and spicy, orange-red relish made of pureed red bell peppers and eggplant, which is served cold with meat dishes or can be used as a condiment or spread.


Ajvar is popular in all southeastern European countries, Turkey, as well as in the countries of the former Yugoslavia.

Harvest period

August to November


Sun-ripened peppers are cut, blended with eggplant, sugar, vinegar, sunflower oil, salt, hot peppers, and garlic. The mixture is then cooked before being preserved in cans or jars.
