Tuna fish (Thunnus) are a genus of large, predatory fish, which are found in all tropical, subtropical, and temperate waters. They are among the most important edible fish and are extremely important to the fishing industry. A distinction is made between 8 species: albacore tuna, southern bluefin tuna, Pacific bluefin tuna, Atlantic bluefin tuna, yellowfin tuna, blackfin tuna, bigeye tuna, and longtail tuna.

The “skipjack” (Katsuwonus pelamis) is the most economically significant species of tuna, the only species in the Katsuwonus/Oceanic bonito genus within the mackerel family (Scombridae). At maturity, it is around one meter long and weighs over 20 kg. The seven dark stripes on its silver belly are a typical feature.

Origin

Skipjack tuna lives in tropical, subtropical and temperate seas. The Food and Agriculture Organization of the United Nations divides the world’s oceans into 19 catch areas. 
The main catch areas are the Indian and the Pacific Oceans, in particular the western Pacific Ocean (FAO 71). Tuna fish is caught using longlines, purse seine nets, ring nets as well as fishing poles (“pole and line”). 

Fishing season

All year, with catch restrictions during the main spawning season in the third quarter of the year.  

Production

The fish is deep-frozen on board the fishing boat. During processing it is steamed, cut, cleaned and sized. Depending on the recipe the fish is preserved in oil or brine and packaged in tins or pouches. 

Sustainability

Catch limits on national and bilateral levels have been introduced to protect fish populations. Considerate fishing methods, e. g. pole and line fishing, FAD-free (fish aggregating device) fishing and MSC-certified free school skipjack fishing contribute to a sustainable exploitation of fish stock.
