Bell peppers and chili peppers belong to the nightshade family. Both the plant and the fruit are called peppers, though there are even more numerous other  names for the fruit to designate the spiciness, size, and even color. Most cultivars contain capsaicin, the substance responsible for the spiciness, though the concentration can vary considerably.


Peppers originated in Central and South America. Today they are grown around the world, but for the food industry mainly in Southern Europe, India, China, and Northern Africa.

Sun-ripened fruits from the pepper plant are deseeded, cut, and preserved in cans or jars, or are individually quick frozen (IQF). Fresh, raw peppers are used in production.
